Beans & Peas

Many of our bulk beans and peas are grown in the USA on a farm that has been certified organic since the early 1980's and 1990's and non GMO. They may be sprouted for salads, sprouts added to blended soups after blending or in slow cooked recipes such as hot soups or beans and rice. Try growing and harvesting some of these beans so you can eat them fresh when in season!

Beans are slowly digested so they only cause a gradual rise in blood sugar. They support fat digestion, strengthen the kidney-adrenal function and promote physical development and growth and are grounding. In Traditional Chinese Medicine, the color of the bean indicates the organ it benefits the most; green - liver and gall bladder, red - heart and small intestine, yellow - spleen-pancreas and stomach, white - lungs and large intestine, black - kidney and bladder. Most legumes range in protein from 17% to 25% which is higher than grains, eggs and most meats. They are a good source of calcium, potassium, iron, zinc, some B vitamins and some are low in fat. Sprouting significantly increases the levels of Vitamin C and enzymes. Most beans reduce pitta and kapha, while lentils increase pitta.
